A Bountiful Market

We finally made it to the farmers market this weekend...our first since the little one was born.  It was not an easy feat.  Parking was tricky, as was navigating the snow drifts with my grocery bags and a baby strapped to my chest.  But we made it...and it was so worth the trouble!  The colors and textures of the market were absolutely phenomenal...from the bright orange squash, to the luscious red apples, pale blue eggs and crisp loaves of bread peppered with poppy seeds.  It was truly a feast for the senses.
Now to get cooking with all of the fabulous ingredients that I picked up!  On the menu for this week- veggie chili, roasted chicken with root vegetables and...well, that's as far as I've gotten for now!  Any suggestions?

Looks like quite a good market for early February! I wish there were more markets around here in the off-season... Sounds like a great menu for the week too! Roasted chicken & veggies especially!
