Raw Day One

Sometimes it'ss funny how things work. This week I was planning on starting my raw food diet, but truth be told, I was kind of dreading it. And then something interesting happened. After a dinner out this weekend, which included meat and pasta and all those "not-so-raw" things, my husband and I both got a bit of food poisoning...his was worse than mine. So now I find myself SO excited to experience a raw food diet. I want to be healthy, full of energy and cleansed. So here we go...today is the very first day. I will be sharing with you my daily menu, as well as a recipe that I like. I know there are some raw foodie readers out there, so if you have any suggestions or advice, send it my way!

Day One:
Breakfast
Banana Nut Smoothie

Lunch
Corn, avocado and cherry tomato salad with balsamic drizzle

Dinner
Red Pepper Curry Soup

Dessert
Chocolate pudding with sliced strawberried (pictured above)

Recipe: Red Pepper Curry Soup from The Raw 50 by Carol Alt
3 red bell peppers
1 apple, peeled and cut into eights
1 ripe avocado
1/2 cup fresh basil leaves
1 cup raw pine nuts
1/3 red onion chopped
1 garlic clove
3 tablespoons curry powder
1 dried red chile pepper chopped
1 teaspoon salt
2 cups water

Set aside 1/2 cup of chopped pepper, 2 apple sections and half the avocado for garnish. Combine the combining ingredients (except the water) in a blender and whir to combine. Slowly add the water and blend until creamy.

Divide the soup evenly among six bowls and garnish with reserved pepper, apple and avocado, and a whole basil leaf. Serve at room temperature.

This sounds super interesting. I would love to do a raw food diet! Where are you getting all the recipes from? The only thing, I have two little girls... I guess I would have to cook two sets of meals :( How long are you doing it for????
